The Art of Making Baingan Bharta

I tried this recipe after an office colleague got baingan bhartha for lunch. It was delicious.  To make Baingan Bharta, you need a big Egg plant. So, I got one from the Cold Storage.

  • 1 big Egg Plant
  • Onion – 1 big
  • Tomato – 1 big
  • Cummin seeds
  • Coriander powder
  • Chili powder
  • Turmeric powder
  • Ginger garlic paste
  • Chili
  • Salt
  • Garam Masala
  • Coriander leaves (Cilantro)
  • Green Peas (optional)
  1. Roast the egg plant on a gas burner. Keep turning and cooking till all the skin on the eggplant is charred and the inner flesh becomes soft.
  2. Once the eggplant is roasted, allow it to cool and then peel off the charred skin.
  3. Once cool, coarsely mash and keep aside for later use.
  4. Heat pan and add the cooking oil + cummin seeds + chopped onions.
  5. Add the ginger garlic paste.
  6. Add the chopped tomatoes.
  7. Add the powdered spices, including the garam masala. Stir to prevent the spices from sticking to the pan.
  8. [Optional] Add Green Peas.
  9. Now add the roasted eggplant and mix well. Add the chopped fresh coriander. Cook another minute and turn off the heat. 

It’s delicious to eat with Chappatis.
