I tried this recipe after an office colleague got baingan bhartha for lunch. It was delicious. To make Baingan Bharta, you need a big Egg plant. So, I got one from the Cold Storage.
- 1 big Egg Plant
- Onion – 1 big
- Tomato – 1 big
- Cummin seeds
- Coriander powder
- Chili powder
- Turmeric powder
- Ginger garlic paste
- Chili
- Salt
- Garam Masala
- Coriander leaves (Cilantro)
- Green Peas (optional)
- Roast the egg plant on a gas burner. Keep turning and cooking till all the skin on the eggplant is charred and the inner flesh becomes soft.
- Once the eggplant is roasted, allow it to cool and then peel off the charred skin.
- Once cool, coarsely mash and keep aside for later use.
- Heat pan and add the cooking oil + cummin seeds + chopped onions.
- Add the ginger garlic paste.
- Add the chopped tomatoes.
- Add the powdered spices, including the garam masala. Stir to prevent the spices from sticking to the pan.
- [Optional] Add Green Peas.
- Now add the roasted eggplant and mix well. Add the chopped fresh coriander. Cook another minute and turn off the heat.
It’s delicious to eat with Chappatis.
